Stuffed Pepper with Feta

Now usually if I am in Greece I do that with Peppers Florinis but since it’s quite impossible to find them in England I just took long red peppers. So here’s what you gonna need.

-long red peppers
-feta cheese or whatever you prefer
-lemon

You wash and clean the peppers. Take out the seeds. Fill them up with feta. Because at some point feta will melt, in order not to start dripping out of the peppers I close them with some bread (good trick huh?). Put some olive oil in the pan. Fry them until the cheese starts to melt in medium low temperatures. Before you take the peppers out of the fire squeeze some lemon in the pan and let them for 1-2 more minutes. Serve the peppers on a plate and put the juice from the pan over them. I like to throw some sesame and basil over it…

It’s very easy to make typical english sweet long peppers taste like Florinis: put them in the grill or in the oven for a wee bit, and as soon as they’re done, put them in a plastic bag (I’m sure u’ve got Tesco bags) for about 4-5mins, or until the skin has started cracking. Peel it off, shower them in olive oil, and, presto.
